The Ito family has lived in Akita for 400 years, and the prefecture has a long and rich history as a rice-growing region. Years passed, and in 1913, Ito Kyonosuke Okina, who owned a brewery in the neighboring village, took over a brewery and started another sake business with colleagues. This is the starting point of the Kariho brewery.

Kariho sake is brewed by Master Toji, a brewing expert, by young Kurabito workers who bring new ideas to the brewery, and by female workers who are sensitive to the products. By harmonizing them all, traditional and new methods create the magnificent Kariho sake.
The preparation of sake is done in the traditional Yamaha way. In this method, the sake remains in fermentation for 60 days at low temperature. The use of lactic acid and naturally produced yeast cells creates a silky taste various aromatic components.
